It tastes like a pumpkin pie and its texture is spongy. We use almond flour and coconut flour. We love to use these flours to achieve delicious taste as well as for the benefits they provide:

Coconut flour – It`s high in fiber
– Maintains healthy sugar levels in our blood

Halloween Pumpkin Muffins

Ingredients for 10 muffins

– 1 cup almond flour
– 1/2 cup coconut flour
– 1 teaspoon baking soda
– 3 eggs 
– 3/4 cup pumpkin puree
– 1/4 teaspoon salt
– 1 teaspoon pumpkin pie spice
– 3 tablespoons melted coconut oil
– 1/4 maple syrup
– 1 teaspoon vanilla extract
– 1/4 chopped pecans

This is how you prepare your delicious pumpkin muffins

1. Preheat oven to 180ºC and grease 10 muffins cups with coconut oil
2. wWhisk together the coconut flour, almond flour, baking soda, pumpkin pie spice and salt in a mixing bowl
3. In another bowl add the eggs, pumpkin, coconut oil, vanilla and maple syrup 
4. Mix the content of both bowls together until combined
5. Spoon 10 muffin cups, you can add more pumpkin spice
6. Bake for 25 minutes, or until the toothpick comes out clean
7. When done let them cool
8. Decorate with melted raw chocolate (optional)
