This is the right choice for you, if you have a dinner with family or friends and you want to surprise them with a healthy and delicious appetiser 😉 Sweet potatoes have a lot of benefits for our health. They are an excellent gluten-free option, packed with potassium, vitamin C, A and B6 which increases our energy level.

The base of this Mexican fiesta is made of roasted sweet potato slices that are topped with vegan cream, avocado and salsa. The combination tastes amazing. Everybody will love them 😉

Mexican Fiesta Sweet Potato Crisps

Ingredients

Sweet potato crisps

• 2 medium sweet potatoes cut into ¼-inch thick rounds
• 2 tbsp. olive oil
• salt and pepper

Cashew sour cream

• ½ cup cashews soaked (for minimum 4 hours), then drained & rinsed
• 1 tsp. lemon juice
• ½ tsp. apple cider vinegar
• ¼ tsp. salt
• ¼ cup water

What you need to do to assemble:

• salsa (tomato, avocado, red onion and chili cut into very small pieces with juice of one lemon and salt. Mix all)
• 1 big avocado peeled and cut in chunks
• green onions

Directions

For the sweet potato crisps

Preheat the oven to 220ºC. Line a baking sheet with oven foil.
First cut 2 sweet potatoes into about ¼-inch thick round slices. You should have around 35 crisps from that. Toss the slices of sweet potatoes into a bowl, add the olive oil and sprinkle it with some salt & pepper.
Then lay them in a single layer on the prepared baking sheet and again sprinkle with salt and pepper. Bake for 35 minutes, or until golden, flipping once halfway through baking. Remove from oven and let cool slightly.

For the cashew sour cream

Prepare your food processor, or blender and fill it up with the following:
Soaked cashews, lemon juice, apple cider vinegar, salt, water.
Blend it until completely smooth. You can add more water little by little, if necessary.

To assemble

Top each sweet potato crisp with a teaspoon of the cashew sour cream, followed by a teaspoon of avocado, 1/4 tsp of salsa and a few green onions.

Repeat until you finish.

Serve immediately and enjoy 🙂
